HUMMUS PASTA & VEGGIES
Place halved cherry tomatoes onto an oiled baking sheet and cook
under a broiler until soft and lightly browned. Parboil broccoli florets
and drain them of all water.
Cook pasta (bowtie pictured here), and also drain of water, cover
and keep hot. Blend half of a container of Lilly’s Roasted Red Pepper,
or Roasted Garlic, Hummus and a half-cupof Cashew Milk into a bowl,
and blend thoroughly with a fork.
Heat this mixture in a microwave for about two minutes, then pour
it over the cooked pasta, tomatoes, and broccoli, and blend them all
carefully with awooden spoon. Season to taste with salt and pepper
and serve warm!
